Our raw & green, unripe walnuts are certified organic by CCOF/USDA. Five pounds of these beautiful green gems can be used to make a large double batch of Nocino (walnut liqueur), delicious chutneys, jams, and even for pickling.
Their inner shells haven't fully hardened, allowing the walnut to be sliced through. It will sometimes take a little more force (with the larger size), though your effort will be worth it. The walnut meat is clear and jelly-like at this time during their growth cycle.

Spice Kit includes: organic juniper berries, organic juniper branch/s, organic cinnamon sticks, organic cloves, organic vanilla beans, organic coffee beans (fresh strips of orange/lemon zest/peel should be acquired locally).
Please note that, as Mother Nature ultimately determines when our actual green walnut harvest occurs, the posted estimated release date is our best "guesstimate." After you place your order, we will let you know via email in mid-May how the walnuts are progressing and when we plan to harvest/ship each sizing.

HOW TO STORE & USE GREEN WALNUTS
Our organic green walnuts should be opened right away to breathe, then used in the desired recipe within 24-48 hours of receipt. Please place in the refrigerator to maintain freshness until use. Green walnuts may show signs of light oxidation, so you may see a few small dark spots appear on the green outer husk, as well as a little skin dehydration. This is normal. Rinse with water only and let dry before use.
When making Nocino, they can be cut in half by carefully notching the skin and then tapping it with a cleaver or heavy chef's knife. If you'd like to keep your hands stain-free, we recommend using gloves when handling green walnuts, as the tannins from the walnut husk are a natural dye and can stain your skin.
GREEN WALNUTS USES & HISTORY
Today, many people use green walnuts to make Nocino, a traditional Italian liqueur, during the Summer Solstice. Nocino traces its roots to the Celts and was brought into Italy by monks.
When pickled or candied, walnuts are an excellent addition to cold meats and cheeses. During the Sixteenth century, Englishmen and women used them for jamming and pickling, while in the Middle East, they were preserved in sweetened, aromatic syrups.

Corky's Nuts have been an amazing gift! I started making nocino with a good friend five years ago. We used our local black walnuts. The end product was a little rough - drinkable, but better suited for stripping paint or colonoscopy prep. While searching for new recipes, I came across Corky's Nuts and have made them my go-to since. Every year brings a little more practice and further opportunities to try new recipes. Each year's nocino tastes a little better than the last, and past years' reserves continue to mature nicely. Even the black walnut batch is starting to taste pretty good (total lie). The best gift to come from the nocino-making hobby is sharing with family and friends. My mom LOVES the nocino! She is the primary consumer by far. Recent batches have even won the approval of friends living part-time in rural Italy. There's a lot to be said about a small business that offers great products and whose owners will communicate directly with patrons. Great stuff.

Order received on June 22. I understand that preorders of green walnuts ship in the order that they were received but they were definitely too hard. I could barely cut them with my big Cutco knife. In Michigan, where I'm from, nuts were already good the second week of June. Thank you. I hope that the liquor will be good. It already smells delicious!
