This isn't an oil pulled from a factory line. Most walnut oil is roasted, high-heat extracted, and chemically filtered to move fast at scale - and often made from walnuts that have sat in storage long before they're ever pressed. We do the opposite.
Every bottle starts with walnuts we grow, pressed fresh from that season's harvest. Freshness is everything: the fresher the walnut, the more of its natural oil, flavor, and beneficial nutrients make it into the bottle. Ours is bottled by hand in small batches. Nothing about it is mass-produced, and it never leaves our care.
Each bottle will look cloudy, with natural separation - that's normal for an oil this untouched, and we think it tastes better this way. Just shake and serve.

HOW TO USE IT
A finishing oil, not a cooking oil. Drizzle it over pasta, roasted vegetables, or grain bowls - use it in dressings, over ice cream or oatmeal, for bread dipping, or even in cocktails. Also safe to use on skin.
Keep refrigerated, always. Heat and sunlight degrade flavor, and high heat can turn it rancid.

FAQ
Why is it cloudy? Unfiltered, unpasteurized oil looks cloudy and may separate - totally normal. Shake before serving.
Can I cook with it? It's best added to already-cooked food, not ideal for longer periods of high-heat cooking.
How should I store it, and how long does it last? Keep refrigerated. We recommend enjoying it within 6 months of the batch date for peak flavor - though it's good for up to a year. That's why we do monthly pressings. ;)
What makes cold-pressed different? It's made from our raw organic walnuts using our proprietary cold-press process - no heat, no chemicals - which preserves more nutrients and fresh flavor.
Why does freshness matter so much for walnut oil? Walnuts start losing flavor and nutritional value the longer they sit unrefrigerated after harvest. We press from our season's current harvest, so more flavor and nutrition ends up in your bottle.

This oil is fabulous. Just used it on baby pea shoots and plan to try with burrata and honey on a baguette. So delicious! You can taste the fresh walnuts on your palate the moment it hits your mouth...why would anyone use butter???
