Fall is here, and our favorite way to fuel up for our upcoming 2025 harvest? Fresh, crunchy, nutty salads. This wholesome meal is a literal workout for your face. ;)

This one’s got it all: shaved brussels sprouts, tender zucchini, sweet dates, and of course, a perfect CORKY'S NUTS trio (or foursome if you add poms!) - whole Raw Organic Walnuts, our award-winning Cold Pressed Organic Walnut Oil, & Olive Oil. Tossed in a maple-kissed vinaigrette, it’s a salad that’s simple, seasonal, and bursting with flavor.

Serves four as a main course, or six as a side.

INGREDIENTS

Salad

  • 2 lbs brussels sprouts, trimmed and shaved thin

  • 1 medium zucchini, shaved into ribbons, or sliced into thin pieces

  • ½ cup CORKY'S NUTS Raw Organic Walnuts, chopped (plus a few for sprinkling)

  • 6–8 dates, pitted + chopped

Maple Walnut Vinaigrette

  • 3 Tbsp CORKY'S NUTS Cold Pressed Organic Walnut Oil

  • 3 Tbsp CORKY'S NUTS Olive Oil

  • 2 Tbsp apple cider vinegar

  • 2 Tbsp balsamic vinegar

  • 1 tsp mustard

  • 1–2 tsp maple syrup

  • Pinch of salt + freshly cracked pepper to taste

Optional Flair & Toppings

  • Fresh herbs like thinly sliced mint

  • Pomegranate arils for a pop of color

DIRECTIONS

  1. Toss the shaved Brussels sprouts, zucchini, dates, and walnuts together in a large bowl.

  2. Whisk or shake all the vinaigrette ingredients until smooth and emulsified.

  3. Pour over the salad and gently toss so everything gets coated.

  4. Garnish with extra walnuts and any optional extras (below).

  5. Don't have dates on hand? Try any stone fruit, raisins, dried apricots, or sliced grapes!
