Our raw & green, unripe almonds are certified organic by CCOF/USDA. These beautiful, fuzzy green gems can be used to make digestifs, delicious chutneys, jams, and even pickles. These are crunchy and juicy, with a lovely citrus tartness when enjoyed straight on their own. Their inner shells haven't fully hardened and remain soft, allowing the almond to be sliced completely through. The almond meat inside is clear and jelly-like at this time during their growth cycle.
HOW TO STORE & USE GREEN ALMONDS
Our organic green almonds should be opened right away to allow them to breathe. Please place in the refrigerator to maintain freshness until use. They'll store in the fridge for up to 2 weeks for best enjoyment. Green almonds may show signs of light oxidation, so you may see a few small dark spots appear on the green outer husk as well as a little skin dehydration. This is normal. Rinse with water only and let dry before use.

What a special treat! We used them in a few different recipes, but my favorite was blending them into a walnut pesto (and eating plain). It was an incredible experience. I can't wait to buy more next year!
