Why do I have to "PRE-ORDER" CORKY'S raw organic walnuts?

Our organic walnuts are grown in Northern California and harvested every fall in late October. We want you to have access to FRESH, AMAZING tasting walnuts so we ship our nuts directly to you after harvest. 

Our convenient pre-order service is available starting in April so you may reserve as many pounds of CORKY'S NUTS from our seasonal crop as your heart desires. Come December, once your walnuts have been harvested, cracked out, and hand-packaged, we ship these beauties directly to you. We can't wait either!

We handcraft all of our products in small batches throughout the year in our certified organic (CCOF) production facility. 


Can I purchase more CORKY'S NUTS organic walnuts during the year or when I run out? 

When our annual harvest sells out, that's it. We recommend getting enough to last you and your family for the year (10-12lbs). Just like the squirrels do!

By offering our crop seasonally, you are able to experience a smooth, buttery tasting walnut, fresh off the tree.

How will I know when my CORKY'S NUTS order has shipped?

You will receive an email notification of shipment with tracking info once we have processed and packaged your order.

All of our pre-order walnuts and cold pressed oil ship in order from the date they were placed. You should expect to receive shipping notification of your order within 1-3 weeks from the "estimated release date" noted on your invoice. 

If no release date is posted, your order will ship within 36 hours. 


What is the difference between a HARTLEY and a CHANDLER walnut?

The Hartley variety is Corky's favorite. Mainly because it has a richer and nuttier walnut flavor profile. Visually, the Hartley can be a little darker in color and will have an assortment of smaller pieces in each bag.

The Chandler variety is lighter than the Hartley and crack out in larger pieces and halves. They have a slightly milder flavor and are great for a walnut first-timer. 

Both varieties are great for decoration on pastries, cakes, or just eating straight out of the bag! Our fresh organic walnuts have a smooth finish and essentially melt in your mouth. We're really not kidding. 


Why do you only ship CORKY'S NUTS organic walnuts seasonally and all not year round?

We are committed to providing you with fresh and delicious organic walnuts. In order to do this, we ship our nuts directly to you within weeks of our annual fall harvest and until we sell out (usually by March). 

A walnut enjoyed just after harvest tastes entirely different from most walnuts you're familiar with. Store-bought walnuts can be anywhere from up to 1, to even 3 years old at the time of purchase. This greatly affects the fragile oils and flavor finish of a walnut, which can result in a tart, bitter aftertaste.

Our fresh walnuts are creamy, buttery and smooth. Yes, our mouths are watering as well. 


What's the best way to store CORKY'S NUTS?

Our Raw Organic Walnuts should be kept sealed and in cold storage as the oils are fragile. Sunlight and warm temperatures will alter the oils, which can quickly affect the taste and quality of the meat. Walnuts can also be placed in the fridge for up to 6 months and freezer for up to a year. 

To maintain the freshness and quality of your nuts, be sure to always keep them sealed and at a temperature between 33 and 41F. 

Our cold pressed organic walnut oil and raw organic walnut butter should be kept sealed and in the fridge to maintain freshness at all times. If you are enjoying these products quite quickly (within 2 weeks), they can be left out.
