WALNUT SHORTBREAD COOKIES

What takes no time at all and 5 simple ingredients? These delicious cookies!

As you know, we're suckers for easy, quick recipes using our FAVORITE nut - walnuts. These were made just today by a family member of ours and of course, we had to share. 

*makes up to 18 cookies

INGREDIENTS

2 1/2 C. - All purpose flour

1/2 C. - Confectioners sugar (plus a little more for dusting)

2 tsp - Vanilla extract

1 C. Walnuts and/or Walnut Meal (walnut meal was used for cookies shown - can easily add additional chopped walnuts too!)

2 sticks - Butter, unsalted

Preheat oven to 325 degrees and adjust wire racks to middle of oven.

Combine butter and sugar in separate large bowl. Beat mixture on high/medium speed until fluffy. Add vanilla to mixture. Then slowly add the flour and walnut meal. 

Once formed, roll off pieces of dough between palms to create rounds. Arrange evenly on parchment lined baking sheet. 

Bake until slightly golden on bottom edges (10-12 min). Try not to over bake and better just slightly underdone than overdone. After baking, let cool on sheet, then transfer to wire rack to cool off completely. Dust or roll cookeis with remaining sugar.
